Bahía del Duque joins the #RealFood movement

The Hotel is strengthening its gastronomic offer based on fresh and seasonal produce from its own vegetable garden and local producers

Bahía del Duque is joining the #RealFood movement and championing menus created from real and quality food. The hotel, which has created its gastronomic offer around the concept of “restaurants within the hotel”, with exclusive, different themed, high quality restaurants, is taking a step further and consolidating its commitment to market cuisine, based on fresh and seasonal produce.

The Hotel began its commitment to market cuisine in 2017, with the opening of the Alisios Market Food restaurant, although now it has made a new effort to convey this concept across all of the gastronomic spaces in the hotel. Part of the raw ingredients it uses comes from its own vegetable garden and from other local producers on the island, thus helping to promote their great quality and the development of the local economy.

According to the executive chef at Bahía del Duque, Juan Miguel Cabrera, “traditionally, the hotel´s gastronomic offer has reflected the quality that we express through our entire service, therefore the choice of fresh products has always been a priority that we are now completing by introducing the “real food” concept across all of our spaces, with our market cuisine restaurant Alisios Market Food flying the flag for the concept”.

With this premise, and in accordance with the demands and tastes of its clients, many of whom are repeat clients, the hotel kitchen team has reduced the use of refined sugars and saturated fats to their finest expression in order to move towards creative and healthy cuisine.

The menus in the different restaurants include seasonal fruits, vegetables and aromatic herbs from the hotel´s vegetable garden, along with meats and fish according to market availability. Among the dishes this season, what stands out are the marinated striped soldier shrimp, free-range eggs, Canarian old-style potatoes and honey truffle; and the Risoni (pasta risotto) with seasonal mushrooms and cured Arico cheese, among others.

Also, with the philosophy of incorporating a healthy breakfast into the diet due to its health and nutritional benefits, the Bernegal restaurant has added a space named the Wellness Corner with specific options for people with different types of intolerances or for clients with special diets, which include products that are low fat, and gluten or sugar free, and natural juices depending on needs: antioxidants, detox, energy or revitalising, among others.

Also, clients staying at the hotel can avail of the nutritional guidance services in the Bahía Wellness Retreat, personalised training plans and create a custom gastronomic itinerary during their stay.
