The team of the restaurant Las Aguas in the Bahía del Duque designs creates the official launch menu for the Spanish Royals.
Wednesday, April 26 2017.- The team that leads the restaurant Las Aguas in the Hotel Bahía del Duque, company owned by Compañía de las Islas Occidentales (CIO), was chosen to prepare and serve the official lunch menu for the Kings of Spain during their visit yesterday to the headquarters of the Presidency of The Canary Islands headquarters in Tenerife.
The team from Las Aguas, made up of 5 wait staff and 6 chefs, led by Canarian head chef Braulio Simancas, elaborated a complete menu that journeys through the most important ingredients, elaborations and wines of The Canary Islands, offering the diners, a culinary representation of each corner of the archipelago.
The menu began with a savoury starter of Shrimp from Alto with avocado and Masca onions; followed by a first course of spring watercress cream soup from La Gomera with vine beans, Canarian pork and cheese from La Gomera.
Wreck fish was the chosen product to star in the main course and was elaborated by the team of Las Aguas using a squid broth, Canarian potatoes and roasted onions.
Following the main course, the royals tasted a platter of cheeses from La Palma, Flor de Guía in Gran Canaria and Fuerteventura, which preceded the dessert, consisting of spongy cured goat cheese with guava and butter biscuits.
In the selection of wines, a Canarian representation was also chosen, starting with a 2015 Altos de Trevejos, sparkling rose D.O. Abona; 2015 white Paisajes de la Isla DOP Islas Canarias; 2015 Can Tinto D.O. Valle de la Orotava and a white Bermejo sweet malvasía, DO Lanzarote.
“As an anecdote from today we have to mention the request by Queen Letizia to try the traditional Canarian dish “Tollos”, which was not planned, but that my team and I gladly prepared to satisfy her wishes” states Brualio Simancas, chef of the Restaurant Las Aguas of the Hotel Bahía del Duque.
